I tried to install spellcheck by running the command:
sudo pacman -S hunspell-en
and then in libreoffice writer by going to Tools -> Options -> Language Settings -> Writing Aids -> Hunspell SpellChecker . Yet when I write the text "Sdfsdf sdfs dfsd fsdfs" and then press F7 I and told that "The spellcheck is complete." with no errors.
What can I try to enable spellchecking?

I don't know any libraoffice. My guess is you mean libreoffice. Have you got en-GB or en-USA in user defined dictionaries.

The you for the spelling correction, I fixed that.
I can see the option for standard, en-GB, en-US, technical, IgnoreAllList . I tried multiple combinations of selecting them and deselecting others (except for IgnoreAllList, that cannot be deselected). None of that fixed the issue.

I've got to ask, are you sure you also have the hunspell package installed? pacman -Q hunspell I just see that you installed the language pack in your post.

Yes, that returns hunspell 1.6.1-1 . Spellcheck works in lyx and firefox

Did you restart LibreOffice after selecting hunspell and installing your dictionaries? You should be able to see english languages in the "Text language" dropdown in the spell check dialog.

This is a long shot. You might try installing the hyphenation and thesaurus packages suggested in the wiki. I seem to remember it not working without those the first time I installed it a time back and I've installed them all together since then. The libreoffice site seems to also indicate that some languages require all three.

I installed hyphenation and thesaurus. In "text language" none is selected. I can see in the drop down menu that english is an option but if I click on it the selection is reverted to none.

What does options > language settings > languages show under user interface and so on?

Did you check the document language? The status bar should display "English (...)", if you have [None], then try to choose English in "Tools->Language->For all Text"
If that works, then you probably have to fix
options > language settings > languages -> Default languages for documents
