This might be related, but:
Out of curiosity, what the output plug that you are using?
I happen to have weird multi-display issues at the moment on my KDE desktop with an AMD card.

My particular issue is that the monitor on my DisplayPort plug would blank out and then come back repeatedly, and not be registered as a display on KDE's start, and that I would be unable to set my monitor on my HDMI plug to a third display.
Anything on the DVI plug works just fine.

I noticed that my HDMI monitor would appear and disappear in the KDE Display Menu under system settings so I just decided to unplug the HDMI monitor. This fixed the issue for me, for some weird reason.
Plugging the HDMI monitor back in would reintroduce the problem as well.

Try swapping between HDMI ports or see if you can get your hands on a different output cord and see if the issue persists if you try with DisplayPort or DVI instead?
