RAID setup on spare disks
I have Arch Linux installed already on the primary HD. Is there a straight-forward guide / wiki page to follow to setup a raid-1 for 2 spare disks?

Should be no different, create an array of just one or both disks, put the data on it

You need to install an RTFM interface.
