Seems that i have the same problem: X hangs.
System is perfectly acessible remotely, but screen is frozen, no keyboard, no mouse, even numlock doesnt' work.
In Xorg.0.log i have:

After upgrading to X 7.5 I had intermittent lockups too. First I switched from nvidia driver to nouveau or nv, but the lockups didnt dissapear and performance was dreadful, so I came back to nvidia.
Looks like I solved the problem (2 days / no lockups) by disabling completely power management by loading the kernel in grub's menu.lst:
kernel /vmlinuz26 root=/dev/md0 ro vga=773 noapic nolapic noacpi acpi=off apm=off
I uninstalled acpid, because hal tried to start it and failed, of course. I also disabled some BIOS videocard options, like AGP Fast Write and AGP Deep Fifo, but I don't think that matters, I used this card with them active for 4-5 years, no problems. (It's an AGP FX5500 Nvidia card). The only thing that bothers me - the computer doesnt power on it's own, I have to push that botton. not a big deal though
So maybe it's worth to try this acpi thing, for me it works.
