You probably somehow double-autostart it, just move away the autostart file you're editing…

It will auto make a "org.kde.latte-dock.desktop" again and crash again.

I think your KDE startup/shutdown setting is set to automatically restart running processes on shutdown. So when you reboot the old latte is restarted and a new one is triggered. Look in Settings -> Shutdown -> Desktop Session and see if its set to a new session.
