we've done something right, because chromium is 12hr now, even when i open without the command. When I run the command and replace "chromium" with microsoft-edge-stable it's still a 24 hour format.

Close all instances of Microsoft Edge and open a new one like this:

LC_ALL=en_US.UTF-8 microsoft-edge-stable

Does this show the 12h format like before when we tested with Chromium?

It did still show 24hr. I ended up deleting ~/.config/microsoft-edge and copying the one from the test account I created. That fixed the issue.
