We'll first need to figure what the slowdown actually is.
Can you un-slow the system by restarting
- pulseaudio (don't ask, it's always responsible if stuff breaks)?
- the graphical target?

What about "xrandr-watcher"? (Just because you assumed the output configuration would have some impact)

No, unfortunately, I don't know how to stop them. When sometime I poweroff for a long time it goes away for 10-15 minutes but restart does do much.

I have some errors linking to pulseaudio, I don't remember where I saw them though.

What would you mean by that ? Teh slow start of the graphic interface, seems ta have been resolved by disabling my apu. 
But it wasn't the issue.

I remove that program, not sure why I had it.

So the temperature might be something, it's weird, I have a 5700G os the temp don't exactly work and it's a bit weird, stay at 95C

That would mean that my fan doesn't work at all. But I would probably had a shutdown by now with the temp security.

Edit:

I feel like the biggest idiot, I have btop open on one screen at all time, and I didn't pay much attention because the temp isn't exactly working, but that temp was apparently.

The fan was stuck for some reason, I have no idea why, I open hte case and manualy made it turn, it's a 3months old noctua fan. I'll send it back I think.'

The temp is already back to 55C.

But the fan stop when I start heavy process, like launching a game or heavy compilation. I have to restarted by hand. 

I can't believe I didn't find that by myself.

Would you still advise to switch to lts or zen kernel for piece of mind for a work machine ?

I'm not sure I understand the question, but since it's not a software problem, you can try and use whatever kernel suits you best.
