Thanks to you guys for taking the time to help troubleshoot, glad to find out it's an issue out of my control. I was running Pop! OS for around a week before switching to Arch with updated gnome, I must have just never maximized Files over those few days lol.

I appreciate how in-depth the wiki is, was about the only way I was able to keep up!

For folks who might have found this while unable to run Nautilus (would try to maximize on opening every time)

gsettings set org.gnome.nautilus.window-state maximized false

should force it out of maximizing on open.
