Is the first package simply an older driver than the latter?

lts is for the long term support kernel. Just have a look at the dependencies

Aha! Thanks JackH79. So it is more stable i suppose. Compositing won't work with the bleeding edge setup. I'mma see what happens with the lts setup.

I wouldn't call it stable, nouveau is still rather fresh (as mythus pointed out), so what kernel is it compiled against doesn't matter that much.
