Did you try downloading the install program from their webpage?
http://download.openoffice.org/index.html

I seem to remember their installation program lets you choose what you want installed. Pacman is not the only way to install programs onto your system.

Yes it is. You may have to write your own PKGBUILD though, since the AUR packages for split oo aren't maintained very well. Those who use OO don't normally mind the bloat, those who would mind the bloat don't use OO, in general.
