If I want to start completley fresh, new gui no programs etc but I don't want to go through the install process all over again is there a way I can remove everything extra I installed and revert back to a fresh arch install so I can customize everything myself again?

a fresh arch install can be anything, there is no standard to revert to
but you can list all packages in groups base and base-dev and uninstall anything that is not in those groups or required by them

Reinstalling will be faster, and have some other advantages, like easily change the partion setup / filesystems.

I think it actually be a good idea to go through the whole installation again. It will make you more comfortable with the system and install procedures each time you go through it until eventually it will become second nature and you know the in's and out's of your linux.
If nothing else you'll be assured that there is nothing left lurking in the system you don't want there.
Just make sure you back-up everything first, obviously. You could even wipe the disk(s) clean firsts before you start anew. (overwrite the disk with stuff you get from /dev/null ... )
