Regarded to bind there is a line in mpd.conf that is related to that. I think there is no need to uncomment it.
Regarded do the errors of database and pid file is simple because you don't have permissions to write. You have 2 options. Or change the permisson of the folder or simple create a folder called mpd for example in your home and save those files there. Log, pid file and etc. Regarded to database mpd ---create-db is not needed since mpd 0.16. The database will be created automatically.

ok I read the wiki, but doesn't seem to do much help. I get as far as the create files step, and then when I try and run 'mpc update', it just says connection refused. when I try and start mpd, I get a similar error:

Well, the last thing I can think about is to set up mpd locally, not as a root but a regular user. BTW, may I see your mpd.conf?

I suppose you have this line in your mpd.conf
user "mpd"
If so try these commands as root:
chown -R mpd:users /var/lib/mpd
chown -R mpd:users /var/run/mpd
