[SE S312] Exploring the whole system

How would I "see" the whole phone filesystem from my box? When I plug the phone with the USB cable I get two devices, say sdb and sdc. Trying to mount sdb gives me "no medium found on sdb". Mounting sdc I can see only a few folders (Camera, Pictures, etc.) and the System folder, which contains some interesting files, but I have yet to try to tamper with them. I'm sure there is a higher level directory than the one I've mentioned, there is surely /, but how can I access it? If the phone is protected, how can I breake it?
