I've just replaced my hard drive, so I decided to do a fresh install of Arch to get a clean configuration. (Arch is on the old hard drive - I can't boot to that now because I've since mostly erased it - I believe it to be failing.)
On boot of the 2011.08.19 install media from a USB stick, I noticed that my sound output was making a popping sound. I dismissed it (it's not annoying) and proceeded with the install.
On completing installation, I've found that while my Line-in is working (I use my computer as a "mixer" for sound coming from other devices) and I'm able to pass-through sounds and adjusting the ALSA mixer does affect the pass-through, the popping sound continues, and no software playback works. The popping sound I describe sounds as if some application is trying to access the sound, but it pops in only one speaker, alternately right then left then right and so on, with a gap of about a minute between (I haven't timed it yet).
Here's what works:
Line in.
Pass-through of Line-in and microphones. (Unmute them and get sound.)
The mixer. I can adjust pass-through volume levels, mute/unmute them. Muting and unmuting the Master and Front channels produces a pop, as an amplifier does when you unplug the phono cable.
ALSA applications. (All sound-producing apps, including Pulseaudio, work without errors and appear to play back sound.)
What does not work:
Sound playback on PCM. No application or diagnostic tool, either as my limited user or as root, actually produces sound. No error messages are printed, and there are no other indications of a problem.
Master, Headphone, PCM, and Front volume controls. They appear to do nothing. (But mute and unmute makes a pop. Huh?)
I had none of these problems on my previous Arch install on the same machine, and I've done my best to reproduce an identical configuration.

I don't know how to disable my video card's sound chip (or I would have done so already). I've exhausted all of the suggestions and resources I could find, without a solution.
Any ideas?

I'm not sure if you have read it already but the wiki has a great troubleshooting article. These two solutions might help you out.

I've read that wiki article front and back several times now, and I've tried both of those solutions. They had no effect, and no messages were produced in dmesg or other that I can find.
Again, it worked without any of these fixes in my previous Arch install.

Well, this is embarrassing.
It appears that when I replaced the RAM (which I did along with my hard drive) I must have inadvertently damaged the sound chip and only the sound chip. I can't find any other explanation as to why I'd have such strange problems consistently across multiple distributions. (I'm running an Ubuntu LiveCD at the moment, and have identical problems.)
Well, Now to decide if I should get a sound card or a new motherboard. Great.
