Choosing pacman mirrors

Does it mean its a CDN and will automatically get the fastest/nearest server?

Do I choose FTP or HTTP

In general how many servers should I enable and how do I choose them? When I ping some servers that I think its near, it does not necessarily mean the fastest ping. In Ubuntu it can determine the fastest server to use. Is there something like that in Arch?

What's a CDN?

HTTP.

As many as you want, and choose them geographically.

You want up-to-date mirrors, so use this.
