Do I need to verify packages, or can I continue as before without worrying about package signatures? And if I start using verification, will I still be able to install packages from non-default repositories, like archlinux.fr?

Lots of information is available on the wiki page here and on the blog posts linked from there.
Short answers, you can disable package signing altogether if you wish, or it is configurable on a per-repo basis. So you could turn it off for any custom repos.

Though you probably want to check if any custom repos you're using have started signing packages too. I know at least the ck kernel repository is signed, don't know about any others
