Changing the default system-side font

I'm trying to understand how to change the default font. Right now, everything in Chromium aswell as sublime text 2 is presented using a font I don't like. (Example)
I want to change (hopefuly everywhere) the default to Ubuntu Mono.

I have read both Fonts page and Font Configuration and didn't understand how to change the default, just how to install new ones, remove old and manipulate stuff like anti-aliasing (too soon, I just need a different font!)
I have also searched a couple of times, but really nothing relevant came up (though I found an interesting i3 discussion while at it)

Where \ what should I look, read, do?
