I put together gtk3-git-ubuntu to fill a niche dependency problem. It took me a while to find the correct bzr repo to pull the patches from, but now at least everything is getting built patched the right way.
I don't understand why some of the ubuntu header files (needed to build other packages, like ido-bzr) are not being installed. Specifically ubuntu-private.h and ubuntumenuitemfactory.h; both of which are available in the source tree.
Comparing my package to gkt3-ubuntu in AUR, I don't see what I could do differently to make sure these header files are installed by the package. Nothing special seems to be done in gtk3-ubuntu...
EDIT: Never figured out why it didn't work; don't know why it started working other than it always should have.
