Usually when creating a bootable USB I just do something like this:
dd if=path/to/windows.iso of=/dev/sdc (where /dev/sdc is my usb drive)
When I plug this drive into another computer and select boot from USB I get the following error:
"No boot sector on USB device"
I know the .iso is good because I used it to create a VM the other day. Any ideas on what I'm doing wrong?

As far as I understand it the problem is not the .iso but the USB.
From what I have read on this the main question would be, is the USB booteable? According to the error you get it is not. Therefore you should investigate further on achieving this task.

Windows 7 ISOs are not bootable from usb AFAIK...
Try using a (windows) tool called "rufus".

Also, if you are trying to create a UEFI bootable USB, it is quite simple. From what I recall it is more or less a matter of creating a vfat partition, then copying the contents of the ISO to it.

Don't. Report the thread if you must.

¿Maybe the user is trying to create the USB installer using an Arch box?
Anyway, if the thread is still here it complies with the forum rules...
