Yes I can see a badly drawn grid, but what I can't guess is if it worked before and stopped to after an upgrade, if you see drawing problems with other graphical applis, your graphical driver, and so on.
As an aside note, I play sudoku with the AUR sudoku-savant package, which is good in my opinion; did you try it?

Thank you for the response. No, I don't have any problems with other graphical apps. My laptop is powered by Nvidia Optimus, so I have two video cards, I tried playing the game with both and the results are the same. It's a fresh install, so I've never updated yet
I prefer gnome-sudoku, I like it better aesthetically

No, I didn't try that, I don't use Gnome, I'm on XFCE
I changed the theme in Settings -> Appearance -> Style and it worked! I had the Greybird-master theme previously which can be found here. It's the default theme on Xubuntu, I like it and don't want to change. What should I do?

How did you install the Greybird-master theme?
Xfce4 is gtk2 dependent and gnome-sudoku is a gtk3 appli, so I am surprised that changing the theme in Xfce worked for the gnome game.
All this is not very clear to me.
Personally I use some gtk3 applis and I have this '$HOME/.config/gtk-3.0/settings.ini' file:

If you install your theme manually, you can do something like that for the gtk3 part of the theme.
Don't forget the necessary engine of the theme:
Dependencies of gtk3.2-branch (for Gtk3.2)
– gtk2-engines-murrine (v0.90)
- gtk3-engines-unico (v1.0.1)
As an aside again here is a screenshot of sudoku-savant:
I don't find that so ugly and there is a solver and the 'expert' level is pretty hard to solve.

I installed the theme via AUR.

I didn't have that file, but even when I created it and filled it with what you provided and installed the oxygen-gtk3 theme nothing changed. I have both unico and murrine engines installed.

No, I didn't change anything except the theme. It's a fresh install, I would remember for sure if I changed something like that

I installed gnome-sudoku and I made some tests in my openbox environment.
Without a settings.ini file, gnome-sudoku uses the default gtk3 theme:
It looks good.
With the settings.ini posted above, the game uses the oxygen-gtk3 theme as expected:
It looks good too.
Then I built and installed the Greybird-master theme from AUR;
I use the settings.ini file changing the line for the theme to:
gtk-theme-name = Greybird
Then I get the same bad looking as you in your first post.
(I reduced the screenshots size by half)
So my conclusion is that the Greybird gtk3 theme is the culprit, and you can report it as a bug to the developers upstream.
I don't see another solution than to use another gtk3 theme for the gnome-sudoku game.
