It is ridiculous how they are removing such useful menu items, while the archaic "move to", "copy to" and "Email" are still there.
How to get it back?

I still have "Open With..." but only on folders O_O
Previously they removed ability to open with arbitrary command, at the same time not all programs were listed in "Open With..." menu, I couldn't live with that.
While not solution for Nautilus, best solution would be to use PCManFm instead, it has all useful features that were removed (and will be removed ) from Nautilus, and more.

I don't have it on folders, either.
I only have an option to open the file with another program, but then that program gets set as the default. I want a "open with.." submenu.

It is very unlikely that something will be brought back into upstream Nautilus, unless you fork it and backport feature yourself.
Alternatives:
-PCManFM, has a list of recent program for file type on right click, including "Open With...", which includes a list of installed programs + ability to use a custom command.
Or various Nautilus forks:
-Mate's Caja have this functionality.
-Cinnamon's Nemo probably too.
