Touch friendly light desktop environments

Hello,

I'm trying to setup an arch linux embedded device for running navigation software in my car (navit, few other map apps for offroading)

I'm using a lilliput 7" capacitive touch screen as the only input source.

I'm looking for a desktop environment that will work well, but isn't as heavy as gnome/unity/kde

Enlightenment has stripped out it's 'mobile' illume modules because no one was maintaining it.

I've been trying out matchbox, and I'm unhappy with the lack of configurability (I just want a largish icons desktop with 3-4 apps and a shutdown button)

Is my only other option Openbox + a heap of config + unclutter + matchbox-keyboard (how do I make this appear when touching into an input field)

plasma mobile was meant for that kind of usage i thought, i'm not sure how compatible it'll be with your specific device (or if it's even available for arch) but you can check it out
you can try windowmaker for large icons and such maybe?
