If I work on an e-mail, the composer window hangs after about a minute. If I leave the window and go back to it, the body is gone. Not just what I was typing but the whole portion of the window where I typed is gone.
This is the error I get when it happens.

I'm running into the same problem, though I'm getting different errors. Interestingly, it's only happening to me on 1 of my 3 Arch computers all running GNOME 3.22. I'm running GNOME under X11, and I've included my journalctl entries.

Based on your error, it does indeed look like inline images are the problem. Editing in text mode or even simply deleting any images from inline replies before it crashes seems to work for me.

It doesn't even have to be a reply. I will get this issue with a new e-mail as well.
I tried specifically using Gnome with x11, and then I do not get the wayland messages, but the errors still occur.
This is also only happening on my one Arch instance, and the fact that an assertion error is triggered makes me wonder if this code was meant to be released. It is my understanding that assertions are to be used in debugging so that programs plainly halt when conditions are not met. It is possible that I might not even have this issue if it was not for the assertion.

No, I have not. I think a dev needs to look into this. I refuse to update my main system until I know this is resolved. I kind of rely on writing e-mails. Any experience opening Arch bugs? I think perhaps one needs to be opened.
I am curious. Are you using EWS, POP, or IMAP for mail in Evolution? I dont think my use of EWS is related, but the more info gathered, the better.

Sorry, no experience with this, but I'm not even sure if this is an Evolution bug, or something to do with GTK.
I am using EWS.

Well, I think we found the problem. Try connecting a gmail or some other type of account through evolution and open a new mail message for that account. I had the window open for a long time with no issue. I opened one for the EWS account and within about a minute, it crashed.

So I realized I have no signature on this new test account. I created one without a picture and had it automatically apply it to mesages. There was no problem.
Then I created a signature with a picture. I immediately got this error when I created the signature.
Gtk-Message: GtkDialog mapped without a transient parent. This is discouraged.I set it to automatically apply it to messages for that account, and the problem was back. I also tried it where I had to manually apply the signature, and the problem was still there. However, I noticed 2 small things. I needed to start typing my message after applying the signature for the issue to happen. Also, since it takes about a minute, there is a work-around here. Type up the e-mail, apply the signature, and then send it before the error occurs.
I am submitting a bug since I can replicate it and pinpointed the cause.

@ericbee could you link the bug in upstream please? I too am affected with this, evolution + ews with inline signature images.

Not knowing what upstream meant, I looked it up and realized I had this bug in the wrong category. Resubmitted and requested the one in Packages:Extra be closed.
