Today when I started my laptop, made an update (last one was approximately one month ago) and reboot system I encountered a bug:
I can't choose icon pack (icons don't change), lot of icons is missing (eg. redshift tray icon, mail reader icon in menu. There is only blank space for this icon)

you should definitely update more than once every month, as it makes tracking errors more difficult.

This happened on my machine too, after rebooting after upgrading gdk-pixbuf2. Personally, I'm using numix-icon-theme-git from the AUR, but I have the same issue with all icon themes I tried from [community]. I'm running xfce.

Yeah I had a feeling that would be the problem. I uninstalled infinality and reinstalled gdk-pixbuf2 and everything is working fine now. Thanks.

Thanks, had the same issue. Installing "fontconfig" and then "freetype2" (and answering "Y") effectively uninstalled the matching Infinality packages. The issue went away after restarting Gnome shell (in my case). In my case the system would log me out of my session when accessing file dialog windows which seemed to be caused by this, odd.

and indeed reinstalling gdk-pixbuf2 will bring icons back as @jasonwryan suggested
