Good tacos are flipped. You don't use those prebaked hard shells, and you also don't serve up raw tortillas. You must carefully pan fry the tortilla in a little bit of oil flipping regularly to toast each side until the tortilla is puffed and slightly crisp and evenly tanned but not rigid and never burned. Then the contents can be added to the taco: don't skimp on the sour cream.
