You are not logged in.
Since a recent update I am automatically logged out of GNOME and all running processes are terminated (not screen lock, really logged out of my session).
After some more time, the computer suspends, which I solved according to this post:
Computer suspends when not logged in
But this does not really solve the original problem of getting logged out.
What setting do I have to tweak to prevent GNOME from logging me out after inactivity?

Post your full journal from when the logout happens.
There's no gnome setting that logs you out after inactivity. If you're running gnome on wayland, it's more likely that the shell is crashing, and consequently you're being logged out.
In Xorg, the shell should restart itself after a crash, and not result in logout. If the X server itself was crashing, the user would get logged out however.
If it's the shell that's crashing, first try disabling all your shell extensions to make sure they're not causing the issue.
