Since I've upgraded to gnome-builder 3.30.1 (from 3.30.0), dark mode is not correctly set when opening the program.
Steps to reproduce:
1) Open Builder and in preferences, set dark mode: builder correctly switches to dark mode.
2) Close Builder application
3) Re-launch Builder: builder now shows in light mode (wrong)
4) Open preferences and look: the dark mode switch is set to ON but the application is in light mode.
5) Switch it OFF and then ON again and builder turns dark now.
6) Loop from point 2

Not helpful.
I circumenvented the issue by setting the default theme to "dark" using "gnome-tweaks".
However, this will make all GTK windows having the dark theme.
You may want to file a bug report on Gnome's upstream.
But in my experience it can take several weeks before anybody is even responding to it.
