I haven't updated my server in about 3 weeks, so when I finally decided to last night I was hit with a seemingly deep-seated dependency conflict that I'm not sure how to resolve.

Yep, that's what happens when you replace repo packages with AUR ones (ffmpeg4.0). Now you have to rebuild that package against the new libs, then update them at the same time, break deps by temporarily removing it to update then rebuild, or remove everything that needs it to update then rebuild..

You think I would have learned after using Arch for over a decade hahaha
Thanks
I actually decided to move my server over to Ubuntu server because I don't update frequently anymore.

I suspect a slightly easier workflow would be `pacman -Syu ffmpeg` which would prompt you to remove the conflicting ffmpeg4.0. The update would then succeed. At that point, you could (optionally) rebuild/install the AUR package.
But I guess it's a moot point now. You can mark this thread as SOLVED if you are satisfied with switchiing to Ubuntu.

That wouldn't have worked, as it would fail because of the requirement of emby-server-beta.

Sorry for the late reply.
I've rebuilt the emby-server-beta package with the latest x264 library. Let me know if something is still not working properly.
