I just switched from Firefox to Chromium and noticed a difference in the font rendering on Gmail: my unread emails are not bold anymore.
I have set up my system to use Noto Sans.
Looking at the source on Gmail, the font-face tag says Roboto, but Roboto is not loaded on Gmail.
I installed Roboto on my machine, checked with fc-match that it resolved correctly, but in Chromium it was still Noto Sans that was rendered.
I also noted that when I go to https://fonts.google.com, the fonts don't render and I get "Something went wrong. Please try again soon." in both Chromium and a fresh Chrome install. It works perfectly fine in Firefox.
Chrome and Chromium can load network fonts though. Visiting https://fonts.adobe.com/fonts, the fonts are loaded and rendered just fine. Therefore I think there's something wrong in the loading of googles fonts, in Chromium and Chrome.
I have no clue how to fix or even debug this further, so I appreciate any help possible!

I still haven't really solved it, but I found a "solution", so that fonts are now being rendered as they should again. I "solved" it by removing my font config, that defaulted my fonts to "Noto" fonts.
