Which are the available programs you know I can boot using GRUB?

I'd like to know a list of programs like memtest86+, which I can install with pacman from the official repositories and add an GRUB entry (or auto-add it with os-prober). Which ones do you know?

Weird question, generally, you can boot any EFI binary that includes all other boot loaders. For an incomplete list you might want to list packages putting stuff into /etc/grub.d or /boot with something like

$ pacman -F /etc/grub.d/ /boot
etc/grub.d/ is owned by core/grub 2:2.04-6
etc/grub.d/ is owned by extra/memtest86+ 5.01-3
etc/grub.d/ is owned by community/deepin-daemon 5.9.4.2-1
etc/grub.d/ is owned by community/grub-btrfs 4.3-1
boot/ is owned by core/amd-ucode 20200421.78c0348-1
boot/ is owned by core/filesystem 2020.05.03-1
boot/ is owned by core/syslinux 6.04.pre2.r11.gbf6db5b4-3
boot/ is owned by extra/intel-ucode 20200508-1
boot/ is owned by extra/memtest86+ 5.01-3

But of those the only thing that's really general purposely relevant is memtest (and you should have set up the microcode for whatever your processor is)
