Hello everyone,
When I press the key to increase/decrease the volume, it is done by steps of 5%. How could I decrease that value ?

That depends. You haven't provided any relevant context. If you are using a DE, then it is potentially configurable through some interface.
If you are using a script in a WM, it could be as simple as changing the value passed to amixer.

I'm using KDE and the default KWin WM (for now).

The first few hits for that duckduckgo seems to be quite dated here...
Right click on the volume icon in the panel -> Adjust Volume Settings -> Look at the first spinner box.
