I want to give Gnome a shot, but installing 66 packages seems bit to much (I know that there are few apps that aren't needed but that still leaves a lot of packages to install), what are the essential packages that are needed for Gnome desktop?

What command did you try that would result in installing 66 packages?

sudo pacman -S gnomeWhich returns with:
:: There are 66 members in group gnome:But there is some stuff that can definetly be excluded like gedit, I'm just not sure how much stuff I can exclude

You just need to install the "gnome-shell" package, the "gnome" group includes gnome-shell plus "a subset of well-integrated applications".
