Disabling testing repositories
If you enabled testing repositories, but later on decided to disable them, you should:
Remove (comment out) them from /etc/pacman.conf
Perform a pacman -Syuu to "rollback" your updates from these repositories.
The second item is optional, but keep it in mind if you notice any problems.
If I don't do rollback will stable packages "catch up " the testing packages?
If I will enable testing
Update system - let's say that linux is updated
Then I will disable testing
I will not do rollback
When packages are moved from testing to stable my system will be "normal"?

If no problems are noticed the package that lands in stable will be the one from testing, if a package is adjusted for some reason it should receive a package bump that will show up as a normal update.
So yes your system will eventually "catch up"
