aplay -l
pactl list cards
pactl list sinks
pactl list sink-inputs
during this?

apparently running
sudo pacman -Sdd pulseaudio
solved it?

None? not even aplay -l? Then you don't have a sound card, what's your
sudo dmesg | grep -E 'snd|sof'
assuming you'll see errors about sof you'll need to install the sof-firmware package.
Edit: Please edit and append if you were the last one to post if you want to add something new to a post. By doing that you are doing quite a few breaking things, you either should switch to pulseaudio properly and remove the pipewire-pulse pipeline or find out why pipewire fails to allocate devices. You've claimed to not have .pacnew files but what's your
systemctl --user status pipewire pipewire-media-session pipewire-pulse
ls -l /etc/pipewire /etc/pipewire/media-session.d
