I use GSConnect, unite, vitals, removable drive menu. All installed from https://extensions.gnome.org/
Enabling even a single one of them will cause GDM to withdraw the possibility to run Gnome on Wayland.
I am always able to start a Xorg session, then, if I disable all the extensions and restart GDM, I will have the Wayland option as well.
Once I am on Wayland I can relaunch all the extensions and they work fine, but if I forget to disable them before shutting down, at the next boot I won't have the Wayland option again.
My system installation dates back to 2014 and I have been running on Xorg until recently, when I started to connect multiple display with different DPI.
I have always kept the system up to date, but during the years I had to intervene on a number conf files, so I am open to the option of just refreshing the whole system as a last resort...
