I have an HP Envy Photo 7855 that I need to setup. I read that Arch has an excellent wiki regarding hp printers. I can't find it. I tried setting it up with the CUPS but that page says that the page is 'out of date'. Could you point me in the right direction?

Did you read the reason for the "out of date" message? The sentence at the top of the article refers to Apple CUPS and it seems that instead of updating that, somebody added this out-of-date template linking to OpenPrinting CUPS. I don't think it says much about the rest of the article.
Under "Related articles" you can find "Printer-specific problems" with sections for various manufacturers and the Envy 7800 series is listed in the HP section, along with further setup instructions and a link to a HP-specific troubleshooting section.
