I have a fresh install of Arch on a mid-2017 27" iMac, and everything works great except there is no sound for HDMI or Analog. The result appears to be the same even with other Arch-based distros.

All of the output profiles for Ellesmere HDMI Audio [Radeon RX 470/480 / 570/580/590] in Pavucontrol are listed as (unplugged) & (unavailable). And there is no Analog output option. I have tried some of the suggestions from the forums here, but can't seem to find a solution. So I wanted to reach out and see if I might be missing anything. After installing alsa-tools, I tried looking into the hdajackretask suggestion, but am unsure how to proceed to test that out.
Goes without saying that I'd be super grateful for any help/input/insight into this :-)
It's got some awesome sound hardware that just feels wasted stuck only working in Apple-jail ;'D

Unless you have external monitors you're unlikely to look for HDMI fixes. Your aplay -lL is the inxi output again, post
sudo dmesg | grep -iE 'snd|sof'as well. There's no point to having two modprobe files with the same content, the only thing that matters is that it ends in .conf the rest of the name is irrelevant. However for an initial test I suggest you remove both files, reboot and start from a clean standard slate.
If you're unlucky you have one of the models that's currently still simply broken: https://bbs.archlinux.org/viewtopic.php?id=233449 but let's not get ahead of ourselves.

Okay, so I took those lines out of both those files and rebooted. Did you mean to delete them entirely? I'm still new to Linux, so I apologize if I am not understanding some things about what happens with .conf files. I had just seen that as a solution anywhere I could find others with same problem. But honestly, I have no idea how they work ;'D
And no, there are no ext. monitors, just the all-in-one iMac unit itself. Are the HDMI outputs something necessary? I do have an older 27" iMac that has a similar setup, except it still has an analog output option that actually works. But it doesn't seem like this one has it for whatever reason. Before any Linux installs, the sound was fantastic when on MacOS. But obviously, would rather not have to run MacOS just to get sound out of it, lol

HDMI is normally not used for any integrated audio, but may be if you attach multiple monitors/a beamer or whatever.
From this snippet "something" is being recognized at least. Your aplay -lL output looks truncated, post the full thing, or at least aplay -l and amixer -c0 #or 1 just the card that isn't hdmi according to the aplay -l index
By broken I mean that the audio driver that is attempted at being used plain doesn't work properly for this particular mac model in which case you'd not be able to get audio.

The "problem" here is that there's only a HDMI card 1, it should have an analog card on card 0. It does setup something otherwise the hdmi card would land on 0 not 1 but can't actually allocate a real device for some reason.
Do you still have any file in /etc/modprobe.d that would try to manipulate snd_hda_intel state? On googling I found: https://github.com/davidjo/snd_hda_macbookpro which might be a bit more involved to setup properly and not even sure whether that would currently still work on recent kernels.

Yeah, I also thought that was weird (WAYYY before ever really diving into possible fixes associated with alsa/jack/pulse)... simply because I have another, older 27" iMac with quite similar specs. And that one actually has no problem doing internal analog speaker output, also across multiple Linux distributions.
So far not with this one.

/etc/modprobe.d/alsa-base.confNo, there are no lines in either file. They exist, but are just empty. I only created them to try the model entry options. Should I remove them overall?

The original driver from https://github.com/davidjo/snd_hda_macbookpro didn't work for the 5.15 kernel, so that other one from egorenar filled in the gaps.
There is at least analog output now, it's a bit low & lacks some of the punch I remember these speakers having, but hey! It's sound! Maybe in the future, there will be more ways to tweak that
