I'll start with some background on the problem and my current setup. I am running Arch linux with the Gnome desktop environment on Wayland. Installation was done, clean about an hour ago from time of posting this. Apart from the basic gnome and gdm I only installed some browsers and dev tools like git, php, docker etc. My problem is rather specific and I think I have a general idea of what the issue is but I cannot as of yet find a solution.
So I am running 3 4k monitors. For reference, they are 1, 2, 3 left to right with 2 in the middle being the main monitor. All of them out of the box run flawlessly and I have no issues. All of them run at 3840x2160 resolution. My issue however comes in times where I want to screen share and I need 1920x1080 resolution (because other people only have 1080p monitors). So my options to achieve this is either scale to 200% or change the resolution. The thing is I ONLY want this to apply to the main monitor, and this is why I am having trouble. Out of the box, changing the scale on the main monitor to 200% also scales applications on other monitors, like browsers and that I do not want. So I'm looking at the option of changing the screen resolution. The issue here however is a little interesting.
The latest version of Gnome (or at least the one you get when installing on Arch Linux) obfuscates the resolution settings on a different screen. So you have to click on the monitor to get to the settings. This creates a big problem where if I change the main monitor resolution it breaks the monitor alignment and refuses to allow me to apply a 1920x1080 resolution. I have somewhat confirmed this on Ubuntu where these settings are on one screen and if I change the resolution of the main monitor and then rearrange the monitors so that all the edges are touching, then I can save the settings, but otherwise it also blocks me. I can without issue change the resolution of the left and right monitors to 1920x1080, which I tried just to confirm.
This brings me to the point where I'm fairly certain if I can just see the resolution setting and the monitor arrangements on one screen I should be able to change the resolution, rearrange the monitors and all will be good. Since other distros have a different layout to Arch on the display settings I'm not entirely sure whether this is an Arch or Gnome issue. I'd very much prefer to use Arch with the Gnome desktop environment but this issue is causing me some headaches right now. This is an operation I want to perform rather frequently and I understand that this is probably not necessarily the normal use, but this is my use case.
Any advice on this matter would be greatly appreciated. I am also willing to provide any additional information that would help in solving this issue.

Probably should have dug even deeper, but I came across some similarly related posts in the Gnome bugs list. I am accepting this as a functional issue in Gnome itself and not related to Arch Linux itself.
