Why are there so many updates

Hello there,

I switched from Kali/Debian a little over a month ago and I have noticed that arch Linux has an update for something everyday. I am not necessarily worried I am just curious since Kali Linux had an update like once a month. Also I would like to ask if it is wise to update as     soon as the update is released. I watched a arch Linux update guide that advised to hold the Linux kernel updates until it has been reviewed.

That's the nature of rolling release. If you don't want updates right away, you picked the wrong distro.

Upstream releases software, Arch packages it. Simple as that.
