[SOLVED] Mate 1.26: How does one switch to using Wayland anyway?

I've read that Mate 1.26 now supports Wayland, but I can't find any information on how one would switch to using Wayland -- any pointers out there?

Where?  And what would this even mean?  Mate is a collection of software.  Indeed, some of that software will run just fine on wayland - but not all of it.  Perhaps most relevant is the WM Marco which is an X11 window manager - so that will not run on wayland, obviously.

Here, but you're right; doesn't look like Marco will work with Wayland yet:

We added Wayland support for Atril, System Monitor, Pluma, Terminal and other components of the Desktop. Furthermore Calculator and Terminal can now be built with Meson.

It will be solved when I can run Mate or a Mate-like DE under Wayland; but yes, for the purposes of this discussion, it's solved.  Thanks for the insights.

It depends how much of a DIYer you are.  There's no telling how long it will be until the MATE team packages up a bundle that will run wayland (if they ever do, though the above-linked release notes suggests it's on their radar).  But you could throw together your own quite readily.  Pick a compositor you liked (mutter might be a starting point), then find alternatives for any x11-only applications in the MATE collection.
