Reading this topic, I think, https://apps.gnome.org/ you are right, there is no OBS Studio on this page.
Perhaps it's because it's not a Gnome app (by Gnome contributers).
But it's most likely this is not what you are trying (anyways)...uhm.
On Flatpak (installed with the Gnome desktop) you can search for OBS. When I do this, in the result list there is OBS Studio.
Scrolling down is leading me to a block mentioning a version 27.2.4.
Please let me know if this is not in line with your message.
Not that I can probably help you if it's not.

It only displays the obs-studio from Arch repo, not from Flathub. It should be able to display apps from Flathub.
I've already installed gnome-software gnome-software-packagekit-plugin flatpak

I can install from Flathub website, but not directly in Gnome Software.
