My KDE Plasma is not showing icons:

I've also experienced sporadic instability issues since this started happening.
This happens on all themes and icons packs.
I also created a new test user, which also experiences this problem (even on Breeze and Breeze Dark themes/icons)
I then created a new VM with Arch and KDE Plasma, which does not have the problem.
When I boot without a secondary monitor attached, the issues disappear.

I have the same issue as soon as I connect my displaylink docking station.
How did you solve the issue or is the start menu thing you referring in your edit something different?

I have the same issue, and I fount that things be fine after downgrade kscreen and libkscreen from 5.26.* to 5.25.5-1
Sorry, I dont see the picture at first, the issue is not same with mine:
After upgrade kscreen and libkscreen to 5.26.1-1, font of all window title be wrong, and start menu become only one wrong green bar, all icons in start menu is missed.

Can't reproduce here on a Wayland session with amdgpu triple monitors. Post/check journal? have you tried removing the kscreen config ( ~/.local/share/kscreen ) and reconfiguring from 5.26 kscreen explicitly?

I tried removing the kscreen config, did not solve the issue.
Regarding Wayland, the issue only occurred with X11. Wayland works fine, but I cannot use Wayland.
The downgrade of kscreen and libkscreen "solves" the issues

Update:
It only occurs on X11 when connecting an external monitor with a different framerate. When forcing the main monitor to match the external one's framerate, the problem disappears. The problem also disappears when using Wayland so that's what I've done now.

Make sure your system is up to date there were a few regressions which should be fixed for the latest plasma releases.
