I started using KDE just because of Dolphin, I really like it, but there are some things I don't like/understand
I installed Arch using the "new" archinstall tool, so KDE was chosen as the default DE.
Some packages was installed after the first setup, because maybe I don't remember all I was using before...
But after all that, as today I don't have the Option, on Dolphin, to MOUNT ISO
I've looked inside Dolphin's configuration... I searched on internet... they all says it's integrated!!
I downloaded an iso just for an example, and this is what my context menu look like

I've also tried on many other kind of ISO(s), kind of ISO that I can simply mount on Windows, but nothing here on Dolphin (KDE)

Just a guess as I don't have plasma installed right now, but I bet you are missing the appropriate (what KDE calls) kioslave. You probably need to install kio-fuse or kio-extras. YMMV, but take a look at pacman -Ss kio for clues. There are a bunch in the AURs as well.

The mounting functionality for ISOs is in the dolphin-plugins package.
