After updating to linux 6.1.1.arch1-1 my system no longer boots with external displays attached (USB to DisplayPort adapter).
I downgraded to linux 6.0.12.arch1-1 and all is good again.
I reported my issue upstream but thought I'd post the workaround here as well in case it helps someone else.

edit: Just to note that (at least for laptop users) you can also get the system to boot up by unplugging the USB-C adapter. Helps if you don't have SSH set up

This was very prescient. Here we are 4+ months and two kernels later, and 6.3.1 is still utterly broken.
I have been using some reverts/patches in the meantime, which can be found here (currently for 6.2.10, working on updating for 6.3.1):

Fixed 1 year and 3 months later (!) in Linux 6.8.1.
Buy AMD, they said. It'll be better, they said.
