I am planning on building a PC that has a RTX2060s and i5-12400F. (that doesn't have integrated graphics) and my knowledge Nividia's gpus require drivers to work and without integrated graphics I don't think it would be able to output video for me to install the 2060s drivers.

Nope, you'll get some sort of (ugly?) video output, anyway. Even if you have a nVIDIA GPU only. ArchISO ships nouveau enabled by default.
Then, during the Installation you will be capable of installing any driver your nVIDIA GPU needs.

If the installation medium doesn't boot due to nouveau issues you can always add nomodeset to the kernel parameters to get a plain text console. But you basically will always be able to get to some terminal in some way.
