Desktop Environment on USB Flash rather then internally installed

This is something I've always really wanted to do, but have not gotten a way of actually doing it.

I want to take my arch installation media and put stuff like NetworkManager and KDE Plasma on the USB Stick itself. Unfortunately, the entire media is about 513 megabytes, 512 for / and 1 for /boot, I think. The problem is, is I want to expand the partition of the... sdx2 partition? but if I do so the entire installer just becomes not bootable. I'm not going to provide the steps I'm doing, as I honestly don't know what I'm doing and would prefer having someone who knows what their doing help me through this, rather than just blatantly laugh at me and point out the things I did horribly wrong in the things that I pulled a "factorio solution" on
