why?

please tell me how os-prober detect the other os than arch linux.
arch linux is in sda3 and ubuntu linux is in sda1.

You need to mount the partitions of the other systems that contain the bootable bits before running os-prober as it relies on your mtab for knowing which paths to check. The exact mount point doesn't matter, you just have to have it mounted.
