Live usb freezes after selecting grub boot option

Computer: Mac Mini Late 2009 (3,1)

I have been having issues when attempting to boot the Arch live usb on an old mac mini. After selecting the grub option to boot into the live environment, the display freezes.

Things I have tried

Using the "nomodeset" parameter

Adding the "nouveau.modeset=0" parameter

When I press the power button, the mac does shut down meaning that it has booted, but is not being shown on the screen. I have gotten Debian 8 to install on the mac with the "nomodeset" parameter, so it might be something with newer kernels that are causing issues. Is there also any way for the live usb to store boot logs, so I can view the log files from another computer?
