I am using headset with microphone that is connected to jack input.
Also I use mic + phones jack adapter to single one adapter:

After connecting I don't see way to choose headset microphone, it's still shows only laptop microphone, which I don't want to use, because of laptop fans noise.
I can use headset microphone in Windows 11.

Find out which audio card you have
aplay --list-devices
look at the kernel documentation for audio card models (effectively a list of "tweaks" to get various cards working)
try out some of the options that seem relevant to your card (see this post for instructions).

martinc2, thank you, it's [ALC295 Analog]; I need to check kernel manual then. I miss times when laptops had a separate jack for mics. Asked in Ubuntu tracker also, because there is same problem reproduces. Maybe I will solve it at some point, but looks very similar to that thread:
