Where do I add a kernel parameter to mount encrypted root partition?

I'm setting up a new system using GRUB as the boot manager and an encrypted root partition. Apparently I need to have grub send a parameter to the kernel telling it to decrypt this partition, but I'm not sure where or how to add it. Looking at the GRUB docs, I see there is an entry in /etc/default/grub GRUB_ENABLE_CRYPTODISK, but that seems to be for having /boot on an encrypted partition. My /boot is on a separate UEFI partition.

Where and how do I tell the kernel to decrypt my root?
